I'll be the first to admit, I do not cook. Well, I certainly at least do not cook well or often. This year I've gotten in the habit of making 2-3 meals a week (usually crockpot) to get us through with leftovers for most of the other days.
A couple weeks ago, we got an instapot. I was pretty hesitant at first, curious about how this was really better than my good ole crock pot. Then what sold me was the ability to cook frozen meat easily.
So we've been trying out some meals, and recently I really wanted to figure out a way to make my normal crockpot white bean chicken chili into an instapot meal. After a little research and combining some recipes...I came up with possibly my favorite meal of all time.

So we've been trying out some meals, and recently I really wanted to figure out a way to make my normal crockpot white bean chicken chili into an instapot meal. After a little research and combining some recipes...I came up with possibly my favorite meal of all time.
Ingredients:
4 frozen chicken breasts
1 can of corn with liquid
Half cup chicken broth
Half a ranch packet
Half diced onion (I use frozen pre chopped, the best invention ever)
1 can Rotel
2 cans great northern white beans- drained
If you like a spicy chili, add some spice here...I do not, this is the perfect amount of flavor for me!
Added after cooking:
2-3 big cups of shredded cheese (we used fiesta blend) added after cooking. We love cheese!
Add tortilla chips (personally we love the On the Boarder chips) on top of your bowl when ready to eat!
Place everything above (minus the cheese and tortillas) in your instapot. Chicken on bottom and everything else piled on top.
Set to pressure cook for 24 minutes on high with 10 min release if frozen. If your chicken isn't frozen, you can do a 20 min cook time with 10 minute release. Note: This is in an 8qt instapot
The chicken just falls apart basically, so shred it up and get it all good and mixed in! Then throw in your shredded cheese in to the pot and stir. Last step is once you dish it out into your bowl, top it with tortilla chips! (Kevin also likes to use this as a topping for loaded chips...so chips on bottom, soup on the top!)
